A pizza is a food specialty coming from Italy.
The term in itself was first used in 997, but the first pizza ever made cannot be dated for sure!
Indeed, the history of this meal is not a linear one, and it is not until the 16th century that is cooked the pizza as we know it nowadays.
It is a round-shaped flat dough on which are layered a tomato sauce and some ingredients scattered on top.

Originally, the term was used to speak about a technique used by a baker: in order to check the temperature reached by his oven, he used to take a little bit of dough (now the pizza dough) and put it inside the oven. The graduated cooking stages of the dough was like a measuring “device” giving to the baker an idea of the inner temperature.

Pizza was a popular dish aimed as an appetite suppressant for people with low revenues.
It was served on the streets or by trolley-men.
It wasn't highly regarded and had not even a line on Italian recipe books.

In 1889, Chef Raffaele Esposito baked a special pizza to honor his queen.
He added on the dough a tomato base, some Mozzarella cheese and basil. These ingredients were not part of pizzas back then. The new recipe was warmly welcomed and the recipe became the favorite one of Queen Margherita. This type of pizza was therefore named after her, and is the most ordered one in Italy.
